NEW ALBANY, MISS.—Master-Bilt, manufacturer of a full line of premier commercial refrigeration systems, introduces its new Master-Chill MBC model reach-in and undercounter blast chillers/freezers. These models join the existing Master-Chill roll-in and pass-thru versions. The MBC series self-contained units are designed to rapidly and uniformly decrease the temperature of hot foods to either a chilled or frozen state. The rapid temperature reduction enhances food safety, increases storage life and improves production efficiency.
Master-Bilt’s new MBC Series features the newest patented technology in blast chillers/freezers with the Food Identification Controller (F.I.C.). F.I.C. automatically adjusts blast chilling cycles with its single multi-sensor probe. The F.I.C. monitors temperatures in the core, beneath and on the surface, preventing surface freezing and degradation, as well as preserving nutritional values of the food.
These new models meet all federal HACCP (Hazard Analysis Critical Control Point) requirements for food safety. Through the chilling cycle, food temperature is dropped from 194 F to 37 F in 90 minutes. In the freezing cycle, the food temperature is reduced from 194 F to 0 F in four hours.
The new Master-Chill undercounter and reach-in models are constructed with a stainless steel interior and exterior, with a satin Scotchbrite finish on the door, side panels, control panel and top. The interior features a polished stainless steel finish with a diamond-polished inner floor for improved hygiene, as well as a one-piece radius cornered liner, removable stainless steel half racks and container support guides. All controls and parts are easily accessible from the front of the unit. A hinged fan cover makes for easy access and service to the evaporator and fan, and an interior drain outlet allows easy cleaning.
