The NAFEM Show to Feature More Than 540 Exhibitors

This week I will be attending The NAFEM Show (North American Association of Food Equipment Manufacturers) in Orlando. The show runs from February 1 to 3 at the Orange County Convention Center. I am looking forward to it and will report on the event in next week’s column. There are currently 541 exhibitors. I will be on the lookout for new innovations and technologies—specifically ones that help hoteliers save energy and water and reduce waste.

Within foodservice there has been a lot of chatter recently about the health risks of gas stoves. According to The New York Times, mounting evidence of the potential health risks of gas stoves, including a link to childhood asthma, ignited a debate, after a commissioner of the United States Consumer Product Safety Commission (C.P.S.C.) suggested that his agency might move to regulate these kitchen appliances.

Responding to the firestorm, Alexander Hoehn-Saric, the agency’s chairman, issued a statement saying, “Research indicates that emissions from gas stoves can be hazardous, and the C.P.S.C. is looking for ways to reduce related indoor air quality hazards. But to be clear, I am not looking to ban gas stoves….”

Induction Cooking: a ‘Disruptive Technology’

Good ventilation can of course minimize risk but experts including The Foodservice Technology Center (FSTC) suggest induction cooking to be a better option than gas. “The new nationwide goal of reaching zero net carbon by 2050 has pushed induction cooking to the forefront as a disruptive technology that can lead the way to zero carbon cooking,” FSTC says, adding that induction cooking offers fast heat-up, precise temperature control, kitchen comfort, no combustion byproducts, easy cleanup and lowered fire risk.

At The NAFEM Show I will be watching for companies determined to reduce the carbon footprint of kitchen appliances.

On the trade show floor, @CenterStage will be the hot spot for moderated panel discussions and quick talks on relevant topics.

As a preview to the show, NAFEM is offering a report entitled, “The ultimate E&S trend recap for 2022.” Trends highlighted in the report include being sensitive to patrons’ allergies, plant-based foods, focusing on replacing equipment that consumes the most energy, smart ventilation systems, immunity-boosting foods, energy-efficiency standards that are now in effect

for reach-in refrigerators and freezers and walk-in refrigerators, reusable servingware, sustainable to-go packaging, the use of ultraviolet light in disinfection and sanitation, and dishwashers with heat recovery systems.

I expect The NAFEM Show to be filled with hundreds of examples and stories of companies making foodservice safer and better for people and planet—all while keeping profitability top of mind.
