Hobart Launches Advansys, an Advanced Warewashing System

TROY, OHIO—Hobart has launched Advansys, an advanced warewashing system. Advansys technology includes innovations that save operators time and money, makes the equipment easier to maintain and service, and improves productivity.

The first product available in the Advansys line is Hobart’s new Advansys Ventless Door Type, which was introduced earlier this year as the AM Select Ventless warewasher. The unit is a recipient of this year’s National Restaurant Association Kitchen Innovations award, which recognizes groundbreaking foodservice equipment as selected by an independent panel of experts and received the Foodservice Consultants Society International (FCSI) Product of the Year award for 2010.

The patent-pending Energy Star qualified Advansys Ventless Door Type not only cleans and sanitizes dishware and heavily soiled pots and pans, but it also can save more than $5,000 in energy recovery, reduced HVAC use and the elimination of a vent hood and fan installation.

Using only 0.74 gallons of water per rack, the new Advansys Ventless Door Type is the first ventless door-type warewasher featuring energy recovery. Operators can save up to $792 per year in energy recovery (based on 200 cycles/day, 360 days per year at an energy cost of $0.011—or 1.1 cent—per cycle). Additionally, the elimination of the vent hood and subsequent make-up air into the kitchen reduces HVAC use, saving on average $776 per year in utility costs. Without the need for a vent hood and fan, the savings on equipment and installation costs is approximately $3,500. Previously, high temperature door-type warewashers required a vent for the steam or water vapor emitted when the door is opened.

Save All Day Long

“Never before has there been a warewasher that performs so well while saving so much,” said Carrie Hoff, product line manager for Hobart Warewash. “The addition of Advansys technology enables the unit to reduce costs from the moment operators turn it on until the moment they leave for the night.”

The Advansys Ventless Door Type has a unique energy recovery condensing cycle that captures water vapor (more commonly referred to as steam) from the wash cycle and condenses it to heat the incoming cold water. A fan circulates the air from the chamber—filled with water vapor—across the fins of the heat exchanger coils filled with cold water at 50 degrees Fahrenheit to 80 degrees Fahrenheit. The difference in temperatures causes the water vapor to condense and preheats the inlet water used for final rinsing. The preheated water temperature reaches up to 140 degrees Fahrenheit, which reduces the amount of energy needed to reach the required 180 degree Fahrenheit rinse-water temperature. The energy recovery system allows operation using a cold water supply and uses the hot water line only for the initial fill. After the completion of the 30-second condensing cycle, an indicator light signals the machine is ready for unloading, and then the process starts over.

The new Advansys Ventless Door Type warewasher is not only ventless, but it is also like having two machines in one—one for pots and pans and one for dishware. Hobart’s Advansys Ventless Door Type achieves the stringent NSF guidelines for utensil washing, which means that pots and pans can be washed automatically instead of being scrubbed by hand. Less time spent soaking, scraping and scrubbing by employees means less turnover and more money to the bottom line. With adjustable cycle times of one, two, four and six minutes plus condensing cycle, the operator can wash anything from delicate glassware to soiled utensils.

Hobart’s Door Type warewasher series is available in electric and includes standard height, tall and front-loading models.
