Frymaster’s Protector Fryer Receives Kitchen Innovations Award from NRA

SHREVEPORT, LA.—Frymaster, LLC’s new multi-efficiency electric Protector fryer has received a 2008 Kitchen Innovations (KI) award from the National Restaurant Assn. (NRA). The Protector was one of only 25 equipment innovations to earn a KI award this year.

“With its oil, energy and labor-saving features and safety benefits, the new Protector fryer has earned its award for innovation by helping to meet the needs of foodservice operators,” said Brenda Fried, vice president of marketing for Frymaster, an Enodis company. “We are very proud to be recognized for our legacy of innovation, pushing fryer performance to higher levels to improve both our operators’ bottom lines and their customers’ health.”

The electric Protector was chosen to receive a KI award by an independent panel of experts that included multi-unit operators and food facilities consultants. The Protector will be showcased in the interactive KI demonstration area at NRA’s Restaurant, Hotel-Motel Show, to be held May 17-20 at Chicago’s McCormick Place. Show attendees are also invited to visit Frymaster in South Hall, Booth #3000.

The 2008 KI awards illustrate that Frymaster and other foodservice equipment manufacturers have stepped up to meet the needs of the restaurant industry, 2008 NRA show chairman William C. Anton, FMP, said in announcing the 2008 award winners. Anton is chairman and founder of Anton Airfood, Inc.

Less Oil Needed for Cooking

High technology meets comfort food in the new Protector fryer. The Protector has a 30-pound frypot that uses 40 percent less oil than traditional 50-pound frypots, but delivers as much great-tasting food as a frypot nearly twice its size. While the lifetime oil savings alone are reason enough to purchase the Protector, the innovative new fryer also leads its field in energy efficiency and offers labor savings as well. The Protector earned an energy efficiency rating of 85.6 percent from the federal government’s Energy Star program, which exceeds federal standards to be declared energy efficient equipment. By exceeding federal efficiency standards, the Protector may qualify for money-saving energy rebates.

Frymaster’s newest fryer offers several proprietary SMART4U high-technology features that are setting the standard for “smart” frying. The high-tech Protector takes the guesswork out of oil management by simplifying and automating typical fryer maintenance tasks such as oil replenishment and filtering—thereby reducing labor and protecting the safety of workers. For example, the Oil Attendant automatically monitors frypot oil levels and replenishes oil as needed from an in-cabinet Jug in Box (JIB), which helps maintain consistent oil temperature and quality. The Oil Attendant also alerts operators when the JIB needs changing.

Meanwhile, Frymaster’s oil- and food quality-preserving patented FootPrint PRO built-in filtration system puts filtration where it’s most convenient to use—right within the Protector fryer battery. The Protector’s onboard computer alerts workers when it is time to filter, which encourages frequent filtering, important for the removal of frying byproducts that take a toll on food quality and oil life. In all, the Protector can maximize oil life to up to four weeks. The Protector’s design—including self-standing, swing-up elements that allow for full access to the frypot—also makes it easy to clean.

These high-tech features generate measurable cost savings and environmental benefits. Independent research conducted for Frymaster found that the Protector can generate annual oil savings of more than 50 percent.
