Baxter Updates Mini Rotating Rack Oven with New Features

ORTING, WASH.—Baxter, a leader in designing and manufacturing quality foodservice and bakery equipment worldwide, recently launched the next generation of its popular mini rotating rack oven. The new OV310 Series ovens include updated and additional features without sacrificing the quality performance or small footprint that have become industry standards. New features include a larger viewing area (350 square inches total) with dual-pane glass, hidden door hinges and longer-lasting silicone door gaskets for a better oven-door seal.

Other enhancements include vertical door handles with a positive latching system, surface-mounted digital controls and easier access to power breaker/gas shutoff valve through the front control panel.

The mini rotating rack ovens are ideal for baking, roasting or reheating a variety of food. The ovens are designed to be versatile and flexible enough to generate a wide range of foods, just within a smaller footprint than the full-size model. The mini rotating rack oven is one of the few at its size with a rotating interior rack for an even bake without manual pan rotation, for everything from breads and pastries to meats and casseroles.

Even Heat, Moisture Dispersion

The mini rotating rack oven has a unique airflow system that ensures heat is evenly dispersed from the top to the bottom of the oven, making certain all food is cooked thoroughly and evenly. A ceiling-mounted fan continuously pulls air up the length of the heat exchanger and forces heated air across the unit and down the other side of the oven. The airflow combines with Baxter’s patented steam system to provide even heat and moisture dispersion, yielding quick recovery and high-volume production.

The mini rotating rack ovens are built to handle heavy loads. To make loading and unloading easier, the internal rack carrier automatically stops in the load/unload position when the doors are opened. Additionally, the ovens have programmable digital controls that are able to store up to 99 recipes, to ensure consistent results each time. The control also offers the flexibility to use up to four steps in each recipe. Other useful features include a cool-down mode and temperature setback and idle mode. Adding extra convenience, the oven is available with several base choices to best meet operator needs.

Baxter’s mini rotating rack ovens are designed to reduce the amount of energy used in cooking and baking. The oven’s steam system acts as a heat reservoir to minimize heat loss when doors are opened and to ensure faster heat recovery. Moreover, each oven is installed with an energy-saving idle mode, which starts after the factory-designated idle time of 90 minutes and reduces the oven to a holding temperature of 275 degrees Fahrenheit. The length of idle time and holding temperature can be reprogrammed at the time of installation to maximize energy saving.
