Barclay Bar Debuts Organic Spirits Menu

NEW YORK—The InterContinental New York Barclay debuts its 45-bottle strong 100 percent USDA approved organic wine and spirits menu. The menu and organic cocktail selection is available at The Barclay Bar, on hotel room service menus and for private banquet events.

In partnering with the Green Bar Collective, the InterContinental New York Barclay and Barclay Bar aim to conserve the environment. Using certified organic ingredients, the spirits offered at the hotel help to maintain clean farmland and groundwater, and prevent adding artificial fertilizers, synthetic pesticides or genetically modified organisms to the world.

The new menu includes nearly 50 selections of organic vodka, gin, rum, tequila, whisky, rye, liquors, cordials, wine, dessert wine and beer. Some of the spirits included are TRU and Square One Organic Vodkas, Lion’s Pride Whiskey and Art in the Age of Root, Fonseca Port Wine and Bonterra Organic, 2009 Cabernet Sauvignon, California. The wines and spirits are packaged in lightweight bottles and 100 percent post consumer waste recycled labels help to reduce packaging pollution.

Rainforests in Central America Benefit

For each bottle purchased by the hotel through the Collective, one tree is planted in the rainforests of Central America. This helps provide not only carbon absorption, but also shade for fair trade crops of coffee and cacao. Additionally, for each cocktail purchased, a donation is made by the InterContinental New York Barclay toward the creation of a clean water job initiative fund.

Barclay Bar mixologist Jose Torrella has designed four organic cocktails which are not only all natural, local and organic, but visually evocative of natural earth cycles. These include such creations as Sunny Day made with Organic Coconut and Aloe Water, Organic Square One Vodka and Organic Agave Nectar. The cocktail looks like a sunny day in its glass with a “ground” of organic chocolate, a micro-green planted as a “tree” solidified in a base of organic gelatin, while the cocktail is topped with a “sky” of organic blue foam and organic lemon twist.

Other cocktails receiving a similar elaborate organic treatment are the organic Honey Drop, the fruity Ooh La La and the Full Moon which depicts a solstice moon, and features Organic Mint, Organic Square One Vodka, Organic Chocolate abstract, and Organic Agave Nectar. This one has a similar base as the Sunny Day, but is dark in hue and garnished with an organic marshmallow.
