ORLANDO, FLA.—The North American Association of Food Equipment Manufacturers (NAFEM) Show is scheduled for February 1 to 3 in Orlando at the Orange County Convention Center. As of early January, 538 exhibitors planned to exhibit their products and services.

Many exhibitors will be on hand to help one reduce costs related to resource consumption and waste generation. Here are some examples:

ChemxWorks Inc.— The D-CARBONATOR soak tank from ChemxWorks removes carbon buildup and the worst fats, oil, and grease (F.O.G.) from kitchen equipment (aluminum baking pans, hood filters, baking racks, floor mats and more) using heated water in combination with the company’s safe, ecofriendly, and proprietary detergent CarbonZyme. Equipment removed from the unit is fully sanitized and bacteria free. It saves on labor, utilities, water, equipment, and chemicals. The D-CARBONATOR is 12 times less costly to operate than a 3-compartment sink and cleans better than a dishwasher. The D-CARBONATOR is available in seven sizes—25, 40, 85, 120, 250, 500, and 500XL gallons.

Excel Dryer, Inc.— Excel Dryer’s expanded and enhanced product line features the high-speed, energy-efficient XLERATOR, XLERATOReco and ThinAir Hand Dryers, the first in the industry to receive Environmental Product Declaration certification from UL Environment. Enhanced standard features include adjustable speed and sound controls, adjustable heat settings (high, medium, low, and off), an externally visible Service LED and multi-voltage options.

InSinkErator—InSinkErator will be at the show with its latest garbage disposals, pulper systems, and its unique Grind2Energy system. Non-sewer based Grind2Energy is more than an alternative to landfills and traditional compost programs. The system recycles food scraps into clean water and renewable energy—in the form of electricity, heat or compressed natural gas. Grind2Energy enables one to dispose of all types of inedible food waste—including fats, oils, and grease—faster, cleaner, and easier.

Somat Company—Somat Pulping Systems are engineered to reduce waste volume by eliminating void spaces and liquids providing an 8 to 1 reduction in volume (up to 85 percent). Somat equipment is engineered to improve dish room efficiency, lower labor costs, and reduce the volume of waste. Visit the show for information about Somat pulpers, extractors, food grinders and dehydrators.

Vivreau USA LP—Vivreau Advanced Water Systems embraces this simple idea: local water can be transformed to be every bit as good as the heavily marketed bottled stuff, but with a tiny fraction of the footprint. Through advanced filtration, chilling, carbonation and touch-of-a-button or pull-of-a-handle convenience, Vivreau offers a responsible water solution. New for 2023 are the Top Pro and Extra I-Tap water dispensers designed for environments where hygiene is of the utmost importance.

As part of the event, there will be @CenterStage, the show’s educational theater with moderated panel discussions and quick talks on topics relevant to the commercial foodservice industry. There will also be numerous networking opportunities, including the Kick-Off party on the evening of Tuesday, January 31 and the NAFEM party on February 2. After the show, one can continue to learn by visiting NAFEM’s YouTube channel—The NAFEM Learning Center—and the NAFEM site.
