STEVENSON, WASH.—Skamania Lodge, A Destination Hotel, is helping lead the charge in food waste management and sustainability practices, as they recently released “Managing Food Waste: Best Practices,” a how-to iBook on food waste management.

The book serves as a best practices guide for resorts, hotels and restaurants for how to implement changes that reduce waste, boost sustainability and—at the same time—help increase sales.

“We’re incredibly proud of our team and what we’re doing here,” said General Manager Ken Daugherty. “We want to help others reduce food waste across the globe. This has been a long time in the making, but sustainability is an ongoing practice and our team at Skamania meets regularly to continue to look for ways in which we can improve.”

In the United States, about 63 million tons of food are wasted each year, with 40 percent coming from consumer-facing businesses, including restaurants and hotels, according to a 2016 report by ReFED. Reducing food waste is one of the easiest and most effective ways to reduce the environmental impact of our food system and feed our communities.

Step-by-Step Guide

The team at Skamania Lodge wanted to do its part to tackle what is a worldwide issue. The book is a step-by-step guide outlining best practices from sales, operations and equipment maintenance to how to minimize food waste and enhance sustainability. It is Skamania Lodge’s intention that the guide create a movement within the industry of resorts, hotels, restaurants and more.

“Skamania Lodge has created what I believe to be a one of a kind ‘recipe’ for food waste reduction that begins with the catering/conference service sales process and ends with limited to no food waste,” said Kathy S. McGuire, Principal, 3 Pillar Solutions, LLC, who wrote the foreword to the book.

Over at HotelKitchen.org, a website dedicated to raising awareness about this issue, case studies from across the hotel industry showcase what food waste reduction can do not just for the hotel itself, but the incredible impact to cities and towns surrounding the hotel.

Skamania Lodge’s own food waste and sustainability efforts will be highlighted on the website, profiling its efforts at the lodge and how it’s become more sustainable, reduced food waste and enhanced sales.
