New Edition of Ethics Book Expands Discussion to Other Areas

LANSING, MICH.—Strong hospitality businesses are built on an ethical foundation. The second edition of Ethics in the Hospitality and Tourism Industry, recently published by the American Hotel & Lodging Educational Institute, offers readers a framework for critically thinking about ethical issues, and then provides numerous case studies from all aspects of hospitality operations to show how to apply ethical theories to sound business decisions.

The book, written by Karen Lieberman, Ph.D., R.D., of Johnson & Wales University; and Bruce Nissen, Ph.D., of Florida International University, presents four traditional ethical theories, and then applies them to a number of common hospitality operational situations that call for an ethical response. Managers, supervisors, and staff members in every operational area will benefit from learning to make ethical decisions that promote positive experiences in hospitality.

Lieberman and Nissen have expanded their book from 12 to 25 chapters, creating new case studies covering hospitality operational areas such as maintenance, housekeeping, food and beverage, front office, and purchasing.
